Taiwan’s warm and humid climate makes it highly suitable for growing world-famous top-quality teas, such as Oolong and Baojhong. Drinking tea is different from drinking other common beverages. The people of Taiwan consider the drinking of tea a “lifestyle art.” It is regarded as a refined leisure activity, good for the body and mind, and promoting friendships and social life. The tea ceremony now popular in Taiwan emphasizes an appreciation of tea’s colors, smells and tastes as well as the brewing techniques that perfect them. These techniques involve the choice of tea sets and other utensils to make tea, the control of water temperature, the amount of tea leaves used and the time used for brewing. These skills require much study and practice, as well as familiarity with the different brewing methods used for different kinds of tea.
